<p>I’ve tried to start this post several times, but struggle to come up with what to say about it besides “Um…it was awesome?” I also updated my iPod to the new operating system without saving my pictures to the hard drive, which includes pictures of my booth! Sorry to disappoint, but I will come back and post them if I end up finding them.</p>
<p>It was a LOT of work to get ready for that Expo, and it was a great experience. Some of the major work (and money) was for one-time things like my banner, my business license, and my table decorations. I ordered so many business cards that I’m tempted to call them a one-time expense even though they’re not, because I won’t have to re-order them for a while. (More on my business cards later.)<br />
I would like to say, at the outset, that Debbie Deaver (who owns and runs this Expo) is amazing to work with. She was very supportive and was a great help, in addition to being very pleasant to be around. </p>
<p>I showed up on Friday afternoon to get things set up, and was impressed by many of the displays around me. After browsing through the displays that were in the process of being set up, I realized that my table didn’t look the way I wanted it to. I realized I needed to make it look like elegant — like a table you might see at a very nice reception.</p>
<p>I went to several different stores and collected a black tablecloth, some fake red rose petals, some confetti that looks like little diamonds, a bottle of Martinelli’s Sparkling Cider.</p>

<p>The Gluten Free Expo was awesome!</p>
<p>The combination of being able to help out at a booth, try lots of yummy samples, learn about new companies, and meet new people made it wonderful!  And having a reader, Elsa, say hi to me made my day <img src='http://glutenfreeexpo.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>
<p>It was so nice to be at this big event where everyone there was either living gluten free or knew someone who was.  I will definitely be going every year from here on out. </p>
<p>Over the next few weeks I hope to highlight some of the different companies that were there.  Also, since I helped out at Udi&#8217;s booth I learned a ton about their products and plan to do a post sharing that info with you.  In the meantime, you can check out Traci&#8217;s review of the expo (and be sure to watch for her coupon match up.)</p>

<p>While wandering the aisles of a local grocery store recently, I spotted a box of sugary, chocolate-covered doughnuts with the words “Gluten Free” prominent on the package.</p>
<p>My jaw dropped. It was then that I realized just how mainstream gluten-free has become. While many people have officially been diagnosed with celiac disease and must avoid gluten for health reasons, many others follow this eating regimen to lose weight.</p>
<p>But just like other diet fads such as “fat free” or “zero calorie,” the gluten-free craze won’t help our battle with the bulge.</p>

<p>Angie Sutcliffe has been baking gluten-free treats and breads at home since 2006, when she was diagnosed with celiac disease.</p>
<p>She experimented with new baking techniques until she developed several gluten-free recipes that satisfied her sweet tooth. Eventually, it led to the start of a business.</p>
<p>Today, Sutcliff is the owner of GF Squared, a home-based bakery that sells gluten-free zucchini bread, pumpkin cakes, bar cookies and other sweet treats and breads.</p>
<p>Sutcliffe is among the 100 Utah businesses whose products will be on display Saturday, Oct. 8, during the annual Gluten-Free Expo in Sandy. The event, which also features cooking demonstrations and health discussions, is one of the largest gluten-free events in the country, said Debbie Deaver, who founded the expo two years ago after she was diagnosed with celiac disease.</p>
<p>Between 2008 and 2009, the number of gluten-free products exploded as the awareness and diagnosis of celiac disease grew, she said.</p>
<p>About one in every 133 people in the United States has the condition, making them unable to eat foods with gluten, a protein that occurs naturally in wheat, barley and rye. When people suffering from celiac disease consume products with gluten, it damages their small intestine and can cause a host of problems, from abdominal pain and diarrhea to chronic fatigue.</p>
<p>There is no cure. The only real solution is a gluten-free diet, said Deaver. For most celiacs, the toughest part about eating off the wheaten path is finding a substitute for baked goods such as bread, pasta, crackers, cookies and cakes.</p>
<p>Deaver said the goal of the expo is to show people that all of those products, like those produced at GF Squared, are available to them&#8230;</p>

<p>Owner Sue Turley and her family opened Eleanor’s Bake Shop when they were unable to find baked goods<br />
without gluten, a protein found in many grains that can damage the small intestine and cause other debilitating health problems.</p>
<p>Eleanor’s Bake Shop offers a gluten-free menu that includes sandwiches, soups, pizza, bread, cakes, brownies, cookies and arepas, a pita-type wrap originally used in South American cuisine.</p>
<p>Shortly after opening its doors last year, Eleanor’s Bake Shop participated in the Gluten-Free Expo, and business boomed. “The Expo introduced us to thousands of customers whose families suffer from gluten intolerance,” Turley said.  “And it was exciting to find out about many other companies that are working to make a gluten-free diet more manageable and enjoyable.”</p>
<p>Five thousand people attended the 2010 Expo, and the sponsors expect twice as many this year, as awareness of celiac disease and of the benefits of a gluten-free diet increases. “About one percent of the population suffers from celiac disease,” said Debbie Deaver, owner of the<br />
Gluten-Free Expo.  “That would mean about 27,000 individuals in Utah.  But celiac disease disrupts the entire family, since it causes severe health problems and forces families to change their diets completely.  We’re trying to help make that transition easier.”</p>
<p>This year’s Expo will feature a &#8220;SillyActs Corner&#8221; with activities for kids who suffer from celiac disease; Utah&#8217;s first Race for Celiacs, to benefit The Celiac Foundation; and opportunities to sample gluten-free products from more than 100 companies. Sales for the gluten-free<br />
products industry are expected to double in the next four years, from $2.5 billion to $5 billion.  More than 3 million Americans suffer from celiac disease, more than those with multiple sclerosis, Parkinson&#8217;s disease, Crohn&#8217;s disease and cystic fibrosis combined.  New research shows another 40 million Americans suffer in some way from non-celiac gluten intolerance.</p>

<p>Park City, UT – May, 1 2010 -Clear you calendars Saturday May 21, from 4:30 to 8pm because Park City Pizza Company is hosting the first Gluten Free Open House in a series leading up to The Gluten Free Expo!  What could be more fun than sampling free pizza, pasta and desserts and learn more about Celiac Disease, Gluten Intolerances and options available to you.</p>
